The number of languages that you use in your website doesn’t matter for choosing a license, the question that you need to make about your project is which kind of content you need to translate and how you will do it? I have a website that is primarily English, but has a Spanish area. It was built with a separate menu item for Spanish, and has Spanish pages, including the archive page for the Spanish Blog Articles.
We have a directory structure of ourdomain.com for English and ourdomain.com/es for Spanish.
Our existing Spanish pages and posts show up with URLs that begin with the appropriate ourdomain.com/es/whatever-URL-is-right-for-the-page-or-post.
I have translated the pages and posts that are currently in Spanish.
If I were to purchase WPML, will it erase my existing translations? Or will it just add to them? Also, ideally, I want to change things so that there is a Spanish menu for Spanish pages, and an English menu for English pages, with a language switcher. (I already have separate header, footer, and sidebars depending on language.)
So, again, will this be a problem to integrate WPML? The only reason I’m looking at it is that translating the hundreds of blog posts is going to take me forever if I have to do it myself.

WPML won’t delete your already created pages in the backend, however must probably they will stop working in the front-end as you are using a domain/es/slug/ structure and WPML will take it over. I’m not sure about it as it will depend on how you crated this URL structure.
Anyway, in that case, you should manually set your already created pages as Spanish translations. Once you do it, they will start automatically working with WPML and our language switcher.

You will see them in your WPML account and you can assign some of them or all to your WPML sites. 1 word = 2 credits for DeepL and Google Translate or 1 word = 1 credits if you decided you use the Miscrosoft translation engine. DeepL is the default in WPML. So you will translate 45 000 words with these 90 000 credits. When you run out of credits you will need to buy more. languages in subdirectories is the default option for WPML settings.
You can assign domains (or subdomains) to languages (instead of directories) but you cannot mix directories and (sub)domains. Please read more about the (sub)domains option here because it requires some extra work to be done on your server.

I see that WPML also offers a currency extension. If I add WPML Multi Language + Woocommerce plugins am I best to use your currency extension and remove the YayCommerce one?

We recommend you to install only one extension for the same feature. However, you can activate and deactivate our Multicurrency feature from WooCommerce Multilingual. In that way, you can select the tool that better works for your project.

Hi, am I understanding correctly that this plugin allows me to create subdirectories with gTLD? For example: main domain.com/article1 in English and domain.com/CN/article1 in Chinese?
Also, does your price include all subdomains? We plan to create a subdomain for our ecommerce store (Eg. shop.domain.com & shop.domain.com/CN).

languages in subdirectories is the default option for WPML settings.
You can assign domains (or subdomains) to languages (instead of directories) but you cannot mix directories and (sub)domains. Please read more about the (sub)domains option here because it requires some extra work to be done on your server.
